The course aims at introducing students to the objectives and importance of food safety, quality controls, essential role of food safety and quality standards in national and international contexts. Importance of food safety and food quality standards: Meaning and implications of ―food safety‖ and ―food quality‖, why have food standards? The concept of risk; Food safety threats, their prevention and handling: Main chemical, biological and physical agents in food, Hazard analysis and critical control points and other approaches to food safety and quality assurance; Food incidents. Major institutions involved in the global framework for food policy and standard, Food code, Main features of legislative controls of important trading partners; Private standards; Ghana‘s National Food Standards and Laws; Compliance with standards.
